This spicy selection shows Calabrian craft at its finest.

The spicy calabrian prosciutto is marinated in the family’s own grown chillies, before hanging to cure for a minimum of 14 months.

The Spicy Salsiccia di Calabria D.O.P. is made using traditional methods with fennel and the family chillies.

The Spicy Capocollo di Calabria D.O.P. is made from the neck fillet, crushed black pepper and hot peppers.

Description

Spicy Prosciutto

Prepared with 135g of pork per 100g of product.  Moisture is lost during curing and maturation.

INGREDIENTS: Pork leg, salt, red pepper powder (1%), Calabrian hot pepper paste (1%) (chilli pepper, salt, acidity regulator citric acid, antioxidant ascorbic acid).

Spicy Capocollo di Calabria D.O.P. (Protected Designation of Origin)

Prepared with 144g of pork per 100g of product.  Moisture is lost during curing and maturation.

INGREDIENTS: Pork, salt, Calabrian hot pepper paste (2%) (chilli pepper, salt, acidity regulator citric acid, antioxidant ascorbic acid), dextrose monohydrate, black pepper, antioxidants ascorbic acid, sodium ascorbate, preservatives potassium nitrate, sodium nitrite.

Spicy Salsiccia di Calabria D.O.P. (Protected Designation of Origin)

Prepared with 131g of pork per 100g of product.  Moisture is lost during curing and maturation.

INGREDIENTS: Pork, Calabrian hot pepper paste (6%) (chilli pepper, salt, acidity regulator citric acid, antioxidant ascorbic acid), salt, smoked paprika, dextrose monohydrate, fennel seeds, antioxidants ascorbic acid, sodium ascorbate, preservatives potassium nitrate, sodium nitrite.

Our calabrian partners are a second generation family owned business, award winning animal welfare producers and great friends of ours. Located in the sub-mountain zone of Sila Greca in the province of Cosenza, Calabria.

To visit, you drive up a dusty path and once you reach the top, you’re met with an absolutely beautiful area featuring olive groves, untouched vegetation and their native pig breed “Suino Nero” roaming the land for herbs, roots and olives .

The care for the habitat and the animals is of the utmost importance to them and to us, which makes for a perfect partnership.
