There are a variety of different Tomme cheeses, however Tomme de Savoie is named after the village that it is from which is in the mountainous region of savoie. This cheese can taste different this is due to which kind of milk it gets whether it is from a cow eating winter hay or fresh summer grass. This cheese is matured for 2-4 months where it develops a thick grey rind that can have patches of yellow red mould.
