Lattebusche is a modern cooperative since 1954. The company is based in Busche, in the province of Belluno, an area rich in pastures on the border of the National Park of the Belluno Dolomites, declared a World Heritage Site by UNESCO in 2009.
How it's made
Piave PDO cheese is born in the province of Belluno, on the border of the National Park of the Belluno Dolomites, where the fodder, rich in flowers, gives milk particular organoleptic characteristics.
Piave PDO Vecchio is a hard, compact cooked cheese characterized by a crumbly and soluble structure. The rind, smooth and regular, is of an intense yellow color, while the straw-colored paste is distinguished by a thin flaking and the absence of holes. A maturation of more than 180 days gives the Piave Vecchio a strong and fruity taste, which makes it unmistakable.
