This matchbox style tin holds, hands down, the best preserved anchovies out there. The anchovies are packed with sea salt and cured for 12-18 months, then hand-cleaned , trimmed, and layered in the tin with Castillo de Canena olive oil and sealed and processed no further. This preserves the texture and fat of the flesh and eats more like jamón. It will change your understanding and appreciation of the humble anchovy!
