Hidden away in an impressive underground network, which first opened at the end of the Middle Ages, the Conde de los Andes winery is one for the history books.
The winery’s rich history doesn’t stop at their cellar. Vines that are over a century old stand on elevated vineyard sites formed 22 million years ago. The composition of the soil, is what gives their wines their expressiveness and each plot sits in its own microclimate. Special attention is paid during the harvest where grapes are harvested area by area so that each and every single one has had the chance to reach the perfect ripeness.
The wine is stirred weekly during the 6 month fermentation process to deepen the complexity of the wine. After barrel fermentation, the wine is left to rest in its bottle for a minimum of one year.
