THE STORY 
Located on the slopes of Getaria, Spain the Akarregi Txiki farmhouse occupies an area of approximately 17 hectares. The winery produces txakoli, a white wine made with hondarrabi zuri grapes. They use the most traditional methods under strict and rigorous control. Advances in wine technology have resulted in great achievements leading to considerable improvements in the fermentation process. The product produced out of this is therefore of extraordinary quality. 
HOW ITS MADE 
The harvesting at Akarregi Txiki is done strictly and exclusively by hand in boxes of 20 kilos. Once picked, the grapes are taken directly from the vineyard to the winery, where the production process begin. After pressing the bunches, the fermentation starts at a controlled temperature transforming it into txakoli. After a few months rest at an ideal temperature of 5-6 degrees, the txakoli is ready for tasting and subsequent bottling. The tanks used are stainless steel, meaning they are able to control the temperature and maximize hygiene. 

THE GRAPE
The Txakoli  “Akarregi Txiki” is produced 100% from autochthonous grape variety “Hondarrabi Zuri”, and is exclusively harvested on the estate. In winter, the vines are at rest, where pruning is carried out in order to guarantee the productivity of the cane. In spring the shoots will bud and develop the future bunches of grapes. 

The harvest is at the end of September or beginning of October when the bunches have fully ripened and reached the perfect balance between sugars and acidity.

Once poured into the glass the txakoli bubbles burst producing explosions of light and bright colours. There is a fresh sparkling in the mouth and a nice tartness.
