THE STORY 
Starting in 1605, Giuseppe Giusti is Italy's oldest balsamic vinegar producer. The family has been passing down their flavour complex recipe and producing bottles of excellence for generations. In order to produce their exceptional balsamic vinegar, experience, attention to detail, and careful refining over four hundred years of family history are used. Giusti combines respect for tradition with a sense of local corporate responsibility, and a modern and sustainable production philosophy. 

Claudio Francesca and Luciano lead the company today and the history of the Giusti family is tightly linked to the local area. With respect to the long family history, balsamic vinegars are produced in the casks of the Giusti family with the same characteristics of the past.
HOW ITS MADE
This traditional balsamic vinegar is incredibly unique. The long, slow ageing process takes place in a series of ancient casks created from different types of woods, according to the ancient "decanter and refill" system. This gives the balsamic its density and roundness, enriched with pleasant spicy and woody notes. 

The ageing barrels are 400 years old. This particular balsamic is made from flavourful sun-dried grapes and aged wine vinegar extracted from a series of centuries old casks aged for at least 25 years.
