Gipsy Hill Brewing Co was founded by Charlie Shaw, Sam McMeekin and Simon Wood in 2014. Nestled at the base of Gipsy Hill, in South London, it is one of London’s largest independently-owned breweries.
 
“Gipsy Hill was born out of family. It was cobbled together by a few guys who needed something meaningful in our day to day, because time away from our new, young families had to mean something. The Keen family have been making Unpasteurised Keens Cheddar since they moved to Moorhayes Farm in 1899. Five generations later, they are still there and proud to be producing world famous, award-winning British Cheddar Cheese.

Producer
Rose’s grandfather started our dairy in 1950 and it converted to being organic in 2001. They felt it a crying shame that this beautiful organic milk was being hauled away and mixed with the milk of many other farms before it was dispersed into the market. They thought that the animals, and their milk, deserved greater appreciation and so they set about creating Nettlebed Creamery.



Rose founded the business in 2015 and it has since won many awards, including Super Gold at the World Cheese Awards, and Best Organic Cheese and Best Soft White at the British Cheese Awards.

Producer
Waterloo is a mild, semi-soft Guernsey milk cheese with a buttery flavour , made using a wash curd method which dilutes the acidity to achieve a soft, gentle flavour. Its distinctive yellow colour is due to the natural carotene in the unpasteurised Guernsey milk which comes from a single herd of pedigree Guernsey cows near Henley on Thames.

Producer
Beillevaire are known for their award winning artisan cheeses and other dairy products. Pascal Beillevaire was born and raised on his parents dairy farm in the Marais Vendéen and like many farmers over the years the grasslands enchanted him. The Marais Vendéen lies between the Loire River and Noirmoutier Island and is predominantly a farming and cheese making area. Pascal blended two of his dearest passion to make his career: trade and agriculture. After many years of hard work and dedication he transformed the family dairy farm into Beillevaire dairy.

Miller's is a long-standing family baker based in Derbyshire Peak District, in a national park. They started over 100 years ago and in that time the way they make their biscuits has barely changed. They use the same bronze rollers and biscuit molding method that has been used for decades. They use only the best quality natural ingredients in everything they bake.
