THE STORY 
Established in 1954, Lattebusche came together to protect small mountain producers, today they are a modern production company working exclusively with local milk, collected daily. Lattebusche works with more than 360,000 litres of milk every day, giving life to a wide range of products. They are most well-known for the Piave DOP. 

The area is characterised by mountains and broad valleys with severe wet winters and cool summers. One of the core company values is environmental protection; they invest large sums of money to keep the natural balance of the territory. Additionally, they use recyclable materials for their packaging and have a modern waste water treatment plant on site.  
HOW ITS MADE 
Piave Mezzano D.O.P is made from raw cow's milk cheese from the Veneto Region of Italy. It's aged for 120 days and has a buttery taste and a vibrant fruity flavour with grassy undertones. 

They pay close attention to each production step including the animal rearing, milking, processing and delivery. They are fully transparent, meaning their ingredients can be traced back through the product's entire manufacturing process. The milk comes from the stables of the cooperative's members, which are located close to manufacturing facilities. The milk is swiftly transferred and processed, guaranteeing the highest freshness and quality. 

The Piave cheese is only made by this company and is the standout product. It is a typical cheese from Belluno and is made according to the traditional processing and ageing process.  Its ageing period ranges from 20 days to 18 months and can be sold both fresh or mature.
