Nicola Simons mission in 2016 was to make delicious jams that can be used in a variety of ways. It all began in her London kitchen trying different varieties of fruit and experimenting until she created the jams using limited amounts sugar. Additionally, she visited chilli farms and chose three unique chillis to develop her three signature chilli jams; one mild, one hot and one super hot.
Nicola stated selling her jams in food markets across London, further developing her recipes as the company grew and gained feedback. There is now a small jam factory in Bristol where Nicola and her team prep, cool, lid, box and dispatch each and every jar of jam.
