This cut can be distinguished by its tender bite and mouth-watering flavour. Coming from Iberian pigs, who roam free and live on a diet of acorns, the meat is provided with a complex flavour and marbled fat that melts in your mouth. When cooking, simply season with salt and pepper then either grill or sear in a pan.
