Guanciale is an Italian cured meat prepared using the flavourful pork cheek. Rubbed with black pepper then cured, this rich, delicate meat has fat that will melt in your hands. Pair with our pecorino, spaghettoni and eggs to make a truly authentic carbonara, with the same ingredients the Italians use.
