Cashel Blue

Cashel Blue is a blue cheese that has a buttery texture, meaning it is on the soft side. The cheese can be so soft it can almost be a paste, which can give you a variety of ways to eat it. Cashel Blue has the potential for a large amount of blue veining as it matures. This means that there will be a rich flavour when you eat it, however the younger it is the less blue veining there will be.

Country of origin:

Tipperary farmers Louis and Jane Grubb created Cashel Blue in the 1980s, they were the first to make a blue cheese in Ireland meaning this cheese holds a lot of tradition there were also very few soft blue cheeses being made in the whole of Britain meaning it became a very popular cheese. This whole operation is still staying within the family and the milk used to make the cheese is all taken from within a 25km radius and some milk from their own cattle.
