Ticklemore

Ticklemore is a goat's cheese however it doesn't taste anything like one! The main flavour that comes through when indulging into this cheese is lemon, as well as a herby flavour that will develop as the cheese matures and gets older. The texture once bitten into reveals a chalky inside which is hidden behind the white rind.

The cheese was first made by Robin Congdon at Ticklemore Farm Dairy hence the name of the cheese but it is now being produced by Debbie Mumford at Sharpham Dairy. In the early 2000s Robin Congdon was struggling for space to make the cheese which is then when he handed over the recipe to Debbie and her partner that she makes cheese with Mark Sharman at Sharpham Dairy. The mould on the cheese comes during the maturing process which gives it a more earthy taste.
