This cheese was made by Anne and Andy Wigmore in Berkshire and was originally made with Guernsey milk which they got from the Duke of Wellington’s estate. Stratfield Saye has been home to the Dukes of Wellington since it was acquired by the very first Duke after the battle of Waterloo in 1817. This cheese was then named after that war. The milk they now use for this cheese is from one herd of Guernsey cows which are located in Henley they wash the curds to bring the acidity down which allows a sweeter flavour to come through.
