Inspired by Korean Chinese and Japanese chilli oils, this rayu is a true everyday sauce just as home on a fried egg as it is on gyozas They start by gently frying some garlic so its crisp and crunchy. They roast peanuts and sesame and then add gochugaru ( Korean Chilli Flake) and a house-blend of chilli into the mix. Then some agave in there to bring sweetness and tamari brings the salt.
